OUR STORY

PJ's Sweet Treats is family owned and operated in the Cayman Islands and now in Jackson, Tennessee; born from a family legacy of bakers and recipes, which dates back over 60 years in the Cayman Islands. The family tree of bakers began with the late Florient Conolly-Ebanks of North Side, the late Vinell Ebanks of Savannah, Newlands and the late Margaret Parsons (nee Ebanks) of West Bay and continued through the most capable hands of sisters, Sharon Ebanks and Barbara Jackson, down the generations to Barbara's daughters, Bridget Delaney and Paula Jackson (Pj). 

 

As one of the youngest of the Jackson women, I launched Cayman Cupcakes in July 2010 in celebration of a rich family history of the sweetest icings and delicious cake batter from scratch. Decades of family secret recipes, baking know-how and decorating tips have all passed down from generation to generation with love and pride; from my grandmothers to their daughters and then to me. I have been the welcoming recipient and, taking the lead from my ancestors, I'm now teaching my children and sharing the wonderful and incredible tastes, smells and experience with my country.

 

In true family tradition, I have been baking since my mom and aunts let me handle sharp objects in the kitchen!  In my pursuit of the perfect confectionary; I can dream up the most mouth-watering and perfectly decorated cupcakes for any occasion - you put on the event and I'll create a cupcake to match! All cupcakes are baked fresh daily from scratch in the bakery's own kitchen and are guaranteed to put a smile on the face of any recipient.
